Baked casserole of nachinka with a golden brown top

Instant Pot Nachynka - Cornmeal Casserole

This is a vegetarian version of Nachinka, a Ukrainian cornmeal casserole. Making it in the Instant Pot saves about 45 minutes of constant stove-top stirring. Nachinka is a versatile side dish that goes with chicken, pork or fish. There are a few variations to the recipe you can try as well - add crumbled bacon or ham before baking.
